我校轻工学院任清副教授团队采用现代微生物技术,从传统酿酒发酵系统中分离筛选新型酿酒功能微生物,目前,该团队从酒曲、窖泥和酒醪中共分离出微生物3000余株,其中,完成鉴定的微生物新菌种达24种,大部分以澳门新莆京7906not官网命名,形成了北工商系列微生物新菌种。围绕这些新菌种资源,该团队开展了研究应用开发工作,目前,已经发表SCI论文14篇,授权国际发明专利2项,国家发明专利8项,其中,5项专利已经转让,转让经费50万元,另外,获2021年中国轻工业联合会科技进步三等奖1项。
随着发酵微生物资源研究的进一步深入,将会形成具有我校自主知识产权的菌种资源库,更多的研究成果将会应用到传统酿酒研究开发中,为揭示我国传统酿酒的风味品质形成机制,提高制曲、窖泥制备和传统酿造的现代化水平奠定了理论基础和技术储备。
